Zucchini Tofu Stir Fry

1 block (14 oz) firm tofu, drained and pressed

2 medium zucchinis, sliced into half-moons

1 medium bell pepper (any color), sliced into strips

1 cup snap peas, trimmed

3 cloves garlic, minced

1 inch piece of ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 tablespoon rice vinegar

1 teaspoon chili flakes (adjust to taste)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Heat the vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and sauté for 5-7 minutes until they are golden brown and crispy on all sides. Remove from the pan and set aside.

    Sauté the Veggies: In the same pan, add the sesame oil. Once hot, add the minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant. Add the sliced zucchinis, bell pepper, and snap peas. Stir-fry for 5-6 minutes until the vegetables are tender yet still crisp.

      Combine Ingredients: Once the vegetables are cooked, return the crispy tofu to the pan. Pour in the soy sauce, rice vinegar, and sprinkle the chili flakes over the mixture. Stir gently to combine all ingredients evenly, cooking for an additional 2-3 minutes to warm through.

        Garnish and Serve: Remove the stir-fry from heat. Garnish with chopped green onions and sesame seeds. Serve hot over rice or quinoa for a complete meal.
