2 cups grated zucchini (about 2 medium zucchinis)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/4 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or raisins (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and wring out excess moisture.

      Mix Wet Ingredients: In a large mixing bowl, combine the honey (or maple syrup), unsweetened applesauce, vegetable oil, and vanilla extract. Whisk until smooth.

        Blend Dry Ingredients: In a separate bowl, whisk together the flour, rolled oats, brown sugar, baking soda, baking powder, cinnamon, and salt. Make sure there are no lumps.

          Combine: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix. Gently fold in the grated zucchini and, if using, the nuts and chocolate chips/raisins.

            Pour Mixture into the Pan: Pour the batter into the prepared baking dish and spread evenly with a spatula.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the top is set and a toothpick inserted into the center comes out clean.

                Cool: Allow the snack bars to cool in the pan for about 10 minutes, then use the parchment overhang to lift them out of the pan onto a wire rack. Let them cool completely before slicing.

                  Serve: Cut into bars and enjoy. These bars can be stored in an airtight container for up to a week.
