Zucchini Pizza

2 medium zucchinis

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (or pizza sauce)

1/4 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp garlic powder

1/4 tsp red pepper flakes (optional)

Fresh basil leaves for garnish

Olive oil for drizzling

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

    Prepare the Zucchini: Wash and dry the zucchinis. Slice each zucchini in half lengthwise and scoop out the seeds using a spoon, creating a small boat. Make sure to leave enough flesh to support the toppings.

      Season the Zucchini Boats: Lightly brush the inside of each zucchini half with olive oil and sprinkle with salt, pepper, garlic powder, and Italian seasoning for flavor.

        Bake the Zucchini: Place the zucchini halves cut-side up on the prepared baking sheet. Bake them in the preheated oven for about 15 minutes, or until they’re slightly tender but still firm.

          Assemble the Pizzas: Remove the zucchini from the oven. Spread about 1-2 tablespoons of marinara sauce into each zucchini half. Top each with a generous portion of shredded mozzarella and a sprinkle of Parmesan cheese. If you like some heat, add red pepper flakes on top.

            Bake Again: Return the assembled zucchini pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once baked, remove from the oven and let them cool slightly. Garnish with fresh basil leaves and drizzle with a little extra olive oil before serving.
