2 medium zucchinis

1 cup breadcrumbs (panko recommended for extra crunch)

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil spray or cooking spray

Optional: Marinara sauce for dipping

Preparation of Zucchini: Preheat your oven to 425°F (220°C). Wash the zucchinis and trim the ends. Grate them using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and wring out as much moisture as possible. This step is crucial for crispy nuggets!

    Mixing Dry Ingredients: In a large bowl, combine the breadcrumbs, grated Parmesan cheese, flour, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well until the ingredients are evenly distributed.

      Preparing the Egg Mixture: In another bowl, whisk the eggs until smooth. Add the squeezed zucchini to the eggs and mix until fully coated.
