Ingredients

2 medium zucchinis

1/2 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Cooking spray or olive oil, for baking

For the Garlic Aioli:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice each zucchini into thin strips (about 1/4 inch thick) to create fries. Place the fries on a clean kitchen towel, sprinkle with salt, and let them sit for about 15 minutes to draw out excess moisture.

Set Up Breading Stations: In three shallow dishes, set up your breading station:

        - In the first dish, add the flour.

          - In the second dish, beat the eggs until well combined.

            - In the third dish, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

Bread the Zucchini Fries: After the zucchinis have rested, pat them dry with paper towels. Dredge each zucchini strip in flour, shaking off any excess. Then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat the strip with the breadcrumb mixture, pressing gently to adhere. Repeat this process until all zucchini strips are coated.

Bake the Fries: Arrange the breaded zucchini fries in a single layer on the prepared baking sheet. Lightly spray or drizzle them with olive oil to help them crisp up. Bake in the preheated oven for 20-25 minutes, flipping halfway through until golden brown and crispy.

Prepare the Garlic Aioli: While the fries are baking, make the garlic aioli by mixing the mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper in a small bowl. Adjust seasoning to taste.

Serve: Once the zucchini fries are crispy and golden, remove them from the oven. Serve warm with the garlic aioli on the side for dipping.
