Zucchini & Corn Pizza

Ingredients
  

1 pre-made pizza dough (store-bought or homemade)

1 cup zucchini, thinly sliced

1 cup fresh or canned corn kernels (drained if canned)

1 cup mozzarella cheese, shredded

1/2 cup ricotta cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

    Prepare the Dough: Roll out the pizza dough on a floured surface to your desired thickness. If you prefer a thicker crust, keep it a little thicker. Transfer the rolled-out dough to a piece of parchment paper for easy transfer to the hot stone or sheet.

      Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for 30 seconds until fragrant. Add the sliced zucchini and corn kernels, and season with salt, pepper, and oregano. Cook for about 5-7 minutes until the zucchini is tender and the corn is slightly caramelized. Remove from heat.

        Assemble the Pizza: Spread the ricotta cheese evenly over the surface of the prepared pizza dough, leaving a border for the crust. Sprinkle the mozzarella cheese over the ricotta. Then, evenly distribute the sautéed zucchini and corn mixture on top. If desired, add red pepper flakes for a bit of heat.

          Bake the Pizza: Carefully transfer the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is bubbling.

            Garnish and Serve: Remove the pizza from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves. Slice and serve hot.
