2 medium zucchinis, grated

1 cup fresh or frozen corn kernels

1 cup all-purpose flour (or gluten-free flour)

1/2 cup grated Parmesan cheese

2 large eggs, beaten

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

Oil for frying (olive oil or vegetable oil)

1/2 cup sour cream or Greek yogurt (for serving)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prepare the Zucchini:

    - Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much liquid as possible to avoid soggy fritters.

      Mix the Batter:

        - In a large mixing bowl, combine the grated zucchini, corn kernels, flour, Parmesan cheese, beaten eggs, green onions, garlic powder, smoked paprika, salt, and black pepper. Stir until the ingredients are well incorporated and form a thick batter.

          Heat the Oil:

            - In a large skillet or frying pan, heat about 1/4 inch of oil over medium heat. To test if the oil is ready, drop a small amount of the batter into the oil; it should sizzle immediately.

              Fry the Fritters:

                - Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon. Fry the fritters in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side, until they are golden and crispy. Remove them from the skillet and place them on a paper towel-lined plate to drain excess oil.

                  Stack the Fritters:
