4 medium zucchinis

1 lb (450g) boneless, skinless chicken breast, diced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup Romaine lettuce, chopped

½ cup Caesar dressing

½ cup grated Parmesan cheese

¼ cup croutons (optional, for crunch)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the insides with a spoon, creating boats. Set aside the zucchini flesh for later use.

      Cook the Chicken: In a skillet over medium heat, add olive oil. Once hot, add the diced chicken breast, garlic powder, paprika, salt, and pepper. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and lightly browned.

        Mix the Filling: In a large bowl, combine the cooked chicken, chopped Romaine lettuce, Caesar dressing, and reserved zucchini flesh (finely chopped). Mix until well combined.

          Stuff the Zucchini Boats: Arrange the zucchini halves on a baking sheet. Spoon the chicken mixture generously into each zucchini boat.

            Add Cheese and Bake: Sprinkle the tops of the stuffed zucchini boats with grated Parmesan cheese. Bake in the oven for 15-20 minutes, or until the zucchinis are tender and the cheese is melted and slightly golden.
