1 medium apple, peeled and grated (about 1 cup)

1 ½ cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1 tsp cinnamon

½ tsp nutmeg

½ cup brown sugar, packed

½ cup granulated sugar

⅓ cup vegetable oil or melted coconut oil

2 large eggs

1 tsp vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)
