Zucchini Apple Cinnamon Bake

2 medium zucchinis, grated

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 cup rolled oats

1/2 cup packed brown sugar

1/4 cup maple syrup

1/2 cup almond milk (or milk of choice)

1/4 cup unsweetened applesauce

1/4 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish or line it with parchment paper for easy removal.

    Prepare the Zucchini and Apples: Grate the zucchinis using a box grater or food processor, then squeeze out excess moisture using a clean kitchen towel. In a separate bowl, peel, core, and dice the apples into small pieces.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, salt, baking powder, and baking soda. Stir until well combined.
