1 cup fresh pineapple, diced

1/2 small red onion, finely chopped

1 small jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt and pepper, to taste

For the Quesadillas:

4 large flour tortillas

2 cups shredded mozzarella cheese (or your favorite cheese)

1 tablespoon olive oil (for cooking)

Sour cream and extra lime wedges (for serving)

Prepare the Pineapple Salsa: In a medium bowl, combine diced pineapple, chopped red onion, minced jalapeño, and cilantro. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Stir well and set aside to let the flavors meld.

    Assemble the Quesadillas: Take a tortilla and sprinkle a generous portion of shredded mozzarella cheese evenly over one half. Top the cheese with a few spoonfuls of the pineapple salsa (draining excess juice if necessary for a less soggy quesadilla). Fold the tortilla in half to cover the filling.

      Cook the Quesadillas: Heat a large skillet over medium heat and add 1/2 tablespoon of olive oil. Once the oil is shimmering, place the folded quesadilla in the pan. Cook for about 3-4 minutes on one side until golden and crispy. Carefully flip and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

        Repeat: Repeat the process with the remaining tortillas and filling, adding more olive oil as needed for cooking.

          Serve: Remove the quesadillas from the skillet and let them cool for a minute before cutting them into wedges. Serve warm with sour cream and extra lime wedges on the side for drizzling.
