2 cups fresh pineapple, diced

1 medium red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

4 large flour tortillas

2 cups shredded cheddar cheese or a blend of cheeses

1 tablespoon olive oil

Sour cream and avocado for serving (optional)

Instructions
 

Prepare the Pineapple Salsa: In a medium mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

    Assemble the Quesadillas: Heat a large skillet over medium heat and add a drizzle of olive oil. Place one tortilla in the skillet, and on half of it, sprinkle with about half a cup of shredded cheese. Add a generous scoop of the pineapple salsa on top of the cheese, then sprinkle another half cup of cheese on top of the salsa. Fold the tortilla in half to cover the filling.

      Cook the Quesadilla: Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. If needed, you can press down on the quesadilla with a spatula for even cooking. Remove from the skillet and repeat the process with the remaining tortillas and filling.

        Serve: Cut the quesadillas into wedges and serve warm with additional pineapple salsa on the side. Add a dollop of sour cream and slices of avocado if desired.
