Zesty Italian Veggie Sandwich

1 large ciabatta roll (or any rustic bread of choice)

1/2 cup roasted red peppers, jarred or homemade

1/2 cup sliced marinated artichoke hearts

1/2 cup fresh mozzarella cheese, sliced

1/2 ripe avocado, sliced

1/4 cup fresh basil leaves

1/2 cup arugula or spinach

1 small cucumber, thinly sliced

2 tablespoons balsamic glaze

2 tablespoons pesto sauce

Salt and pepper, to taste

Olive oil for drizzling

Instructions
 

Prepare the Bread: Start by slicing the ciabatta roll in half horizontally. If desired, lightly toast the inside of the bread on a skillet or grill for extra texture.

    Layer the Veggies: On the bottom half of the cut roll, first spread the pesto sauce evenly. Then layer the roasted red peppers, marinated artichokes, fresh mozzarella slices, and avocado.

      Add Fresh Greens: Next, place the fresh basil leaves and arugula (or spinach) over the cheese and veggies. Top it off with the cucumber slices.
