4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked quinoa

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup feta cheese, crumbled

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, chopped

1/4 cup fresh parsley, chopped

1 tsp dried oregano

1 tsp dried basil

1/2 tsp black pepper

1/2 tsp salt

1/2 cup tomato sauce

Olive oil for cooking

Lemon wedges for serving

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil. Place them upright in a baking dish.

      Cook the Filling: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

        Add Turkey: Add the ground turkey to the skillet and cook, breaking it up with a spoon, until browned and cooked through, around 5-7 minutes.

          Combine Ingredients: In a large bowl, combine the cooked turkey mixture with quinoa, feta cheese, cherry tomatoes, Kalamata olives, parsley, oregano, basil, black pepper, and salt. Mix well until all ingredients are evenly incorporated.

            Stuff the Peppers: Generously fill each bell pepper with the turkey and feta mixture.

              Add Tomato Sauce: Spoon the tomato sauce over the top of the stuffed peppers, covering them lightly to keep them moist during baking.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are slightly golden.

                  Serve: Remove the stuffed peppers from the oven, let them cool slightly, and serve with fresh lemon wedges on the side for an extra zesty flavor.
