2 large cucumbers, diced

3 ripe tomatoes, chopped

1 small red onion, finely sliced

1 cup Kalamata olives, pitted and halved

1 cup fresh feta cheese, crumbled

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and black pepper to taste

Fresh parsley or basil for garnish

Prepare the Vegetables: Start by washing the cucumbers and tomatoes thoroughly. Dice the cucumbers into bite-sized pieces and chop the tomatoes into wedges. Place them in a large mixing bowl.
