Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

Juice of 2 limes

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

For the Taco Bowls:

2 cups cooked brown rice (or quinoa)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup shredded romaine lettuce

½ cup diced red onion

½ cup shredded cheddar cheese (or dairy-free alternative)

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Salsa or pico de gallo, for topping

Instructions

Marinate the Chicken: In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, cayenne pepper, salt, and pepper. Add the chicken thighs and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove chicken from the marinade and grill or sauté for about 6-8 minutes on each side, or until the chicken is cooked through (internal temperature should reach 165°F). Let it rest for a few minutes before slicing.

Prepare the Rice: While the chicken is cooking, prepare the brown rice or quinoa according to package instructions if not already cooked.

Assemble the Bowls: In large bowls, start with a base of cooked brown rice or quinoa. Layer on the black beans, corn, cherry tomatoes, lettuce, red onion, and top with sliced avocado.

Add the Chicken: Slice the grilled chicken and arrange it over your bowls.

Finishing Touches: Sprinkle with shredded cheese and fresh cilantro. Serve with lime wedges and a drizzle of salsa or pico de gallo on top.

Enjoy: Dig in and savor the zesty flavors that bring this taco bowl to life!
