1 medium head of cauliflower, cut into florets

1 cup buffalo sauce (adjust for spice level)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup ranch or blue cheese dressing

Optional: Sliced green onions and celery sticks for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss until the florets are evenly coated.

      Buffalo Sauce Coating: Pour the buffalo sauce over the seasoned cauliflower and mix well, ensuring each floret is thoroughly covered.

        Roast the Cauliflower: Spread the buffalo cauliflower on the prepared baking sheet in a single layer. Roast in the oven for about 20-25 minutes, or until the cauliflower is tender and slightly crispy, flipping halfway through.

          Assemble the Wraps: Once the cauliflower is roasted, warm the tortillas in a dry skillet for about 30 seconds on each side. This makes them more pliable and easier to roll.
