1 can (15 oz) black beans, rinsed and drained

1 cup frozen corn, thawed

1 bell pepper (red or yellow), diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper to taste

12 small tortilla cups or boats (store-bought or homemade)

Prepare the Salad: In a large mixing bowl, combine the black beans, corn, diced bell pepper, red onion, cherry tomatoes, avocado, and fresh cilantro. Gently toss to combine all the ingredients while being careful not to mash the avocado.
