White Chicken Enchilada Casserole

2 cups cooked chicken, shredded

1 can (10 oz) cream of chicken soup

1 cup sour cream

1 cup green enchilada sauce

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

8 small flour tortillas

1/2 cup diced onion

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    Prepare the chicken mixture: In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, green enchilada sauce, diced onion, minced garlic, cumin, chili powder, salt, and pepper. Mix well until uniformly blended.

      Layering: In a greased 9x13 inch baking dish, begin layering by placing 2 tortillas side by side at the bottom. Spread half of the chicken mixture over the tortillas. Sprinkle half of the Monterey Jack and cheddar cheese over the top.

        Repeat: Place another layer of 2 tortillas over the cheese, followed by the remaining chicken mixture, and finish with the last 2 tortillas on top. Spread the remaining cheese evenly over the final layer of tortillas.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

            Cool and Garnish: Once done, take out the casserole and let it cool for about 5-10 minutes. Garnish with freshly chopped cilantro before serving.
