2 cups mixed leafy greens (spinach, kale, arugula)

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1 bell pepper, thinly sliced (any color you prefer)

1/2 avocado, diced

1/4 cup red onion, thinly sliced

1/4 cup shredded carrots

1/4 cup chickpeas, rinsed and drained

2 tablespoons pumpkin seeds

1 tablespoon fresh parsley, chopped

Juice of 1 lemon

2 tablespoons extra-virgin olive oil

Salt and pepper to taste

Start by thoroughly washing the mixed leafy greens under cold running water to remove any dirt. Shake off excess water or use a salad spinner to dry.
