Ingredients

4 cups watermelon, cubed

1 cup strawberries, hulled and sliced

1/2 cup crumbled feta cheese

1/4 cup fresh mint leaves, chopped

2 tablespoons honey (optional)

Zest of 1 lime

Juice of 1 lime

Pinch of sea salt

Fresh mint sprigs for garnish

Instructions

Prepare the Watermelon: Start by cutting the watermelon into small cubes. If desired, use a cookie cutter to create fun shapes for a playful presentation.

Slice the Strawberries: Hull the strawberries and slice them into thin pieces. Keeping the pieces uniform will help with even distribution in the cups.

Make the Dressing (Optional): In a small bowl, whisk together the honey (if using), lime juice, lime zest, and a pinch of sea salt until well combined. This will be drizzled over the cups.

Layer the Ingredients: On each watermelon cube, stack a few slices of strawberries and sprinkle some crumbled feta cheese on top. Repeat until all ingredients are used up.

Add the Dressing: Drizzle the honey-lime dressing over the stacked watermelon, strawberry, and feta cups for added flavor.

Garnish: Finish with a sprinkle of fresh mint leaves on top and add a mint sprig to each cup for an appealing look.

Serve: Arrange the watermelon strawberry feta cups on a serving platter and enjoy the refreshingly vibrant flavors!
