Ingredients

4 cups seedless watermelon, cubed

2 cups cucumber, peeled and diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh mint leaves, chopped

1/4 cup feta cheese, crumbled

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste

1 small lime, zested and juiced

Edible flowers (optional, for garnish)

Instructions

Prepare the Ingredients: Start by washing all fresh produce. Cube the watermelon, peel and dice the cucumber, and halve the cherry tomatoes. Finely chop the red onion and mint leaves.

Combine the Base: In a large mixing bowl, combine the cubed watermelon, diced cucumber, cherry tomatoes, and chopped red onion.

Make the Dressing: In a separate small bowl, whisk together the olive oil, balsamic vinegar, lime juice, lime zest, salt, and pepper until well combined.

Dress the Salad: Pour the dressing over the fruit and vegetable mixture. Gently toss to coat all ingredients evenly.

Add Feta and Mint: Sprinkle in the crumbled feta cheese and chopped mint leaves, folding them into the mixture carefully to avoid breaking up the feta.

Serve in Cups: For serving, you can use small cups or hollowed-out cucumber halves. Spoon the mixture into each cup, filling them generously.

Garnish (Optional): If desired, finish with a sprinkle of edible flowers for a pop of color and an elegant touch.

Chill: Let the cups rest in the refrigerator for about 15-20 minutes before serving to allow the flavors to meld.

Enjoy: Serve chilled as a refreshing appetizer or side dish at your next gathering!
