Warm Farro Salad with Apples Cranberries

1 cup farro, rinsed

2 ½ cups vegetable broth or water

1 medium apple, diced (preferably Granny Smith for tartness)

½ cup dried cranberries

½ cup walnuts, chopped and toasted

½ cup feta cheese, crumbled (optional, for creaminess)

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper, to taste

½ teaspoon cinnamon

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Farro: In a medium saucepan, combine the rinsed farro and vegetable broth (or water). Bring to a boil, then reduce heat to low and let it simmer for about 25-30 minutes, until the farro is tender but chewy. Drain any excess liquid if necessary.

    Prepare the Dressing: While the farro is cooking, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, pepper, and cinnamon in a small bowl. Adjust seasoning to taste.

      Toast the Walnuts: In a small skillet over medium heat, toast the chopped walnuts for 5-7 minutes, stirring frequently, until they are fragrant and lightly browned. Careful not to burn them!

        Combine Ingredients: In a large bowl, combine the cooked farro, diced apple, dried cranberries, and toasted walnuts. Pour the dressing over the salad and toss gently to combine.

          Add Feta: If using, sprinkle the crumbled feta cheese on top and give it a gentle toss to incorporate.
