Warm Cinnamon Roll Baked Oatmeal

Ingredients
  

2 cups rolled oats

2 cups almond milk (or any milk of choice)

1/4 cup maple syrup (adjust based on sweetness preference)

1/4 cup unsweetened applesauce

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

2 teaspoons ground cinnamon

1/2 teaspoon salt

1/4 cup brown sugar (optional, for added sweetness)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or chopped apples (optional)

For the Cinnamon Roll Swirl:

1/4 cup brown sugar

1 tablespoon ground cinnamon

2 tablespoons melted butter or coconut oil

For the Cream Cheese Glaze (optional):

4 oz cream cheese, softened

1/2 cup powdered sugar

1-2 tablespoons milk (to thin)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or similar.

    Mix the Wet Ingredients: In a large bowl, combine the almond milk, maple syrup, applesauce, egg, and vanilla extract. Whisk until well combined.

      Add the Dry Ingredients: To the wet mixture, add the rolled oats, baking powder, ground cinnamon, salt, and brown sugar (if using). Gently fold in the walnuts or pecans and raisins or apples, if incorporating.

        Prepare the Cinnamon Roll Swirl: In a small bowl, mix together the brown sugar and ground cinnamon. Drizzle the melted butter or coconut oil over the mix and stir to form a crumbly sugar mixture.

          Assemble the Baked Oatmeal: Pour the oatmeal mixture into the prepared baking dish. Then, using a spoon, create swirls throughout the mixture by adding spoonfuls of the cinnamon sugar mixture on top. Use a knife to gently swirl it into the oats without fully mixing it in.
