2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/3 cup brown sugar (packed)

1 teaspoon cinnamon

1/2 teaspoon nutmeg (optional)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup walnuts, chopped (or any nuts you prefer)

1/2 cup dried cranberries or raisins (optional)

2 tablespoons melted coconut oil or butter

1 tablespoon chia seeds or ground flaxseed (optional, for added nutrition)

Instructions
