2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon garlic powder (optional)

1/4 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk (or regular milk with 1 tablespoon vinegar added)

1 tablespoon chopped fresh chives (optional)

Cooking spray (for the air fryer)

Prepare the Air Fryer: Preheat your air fryer to 350°F (175°C). This ensures that the biscuit bites cook evenly and rise beautifully.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder until well combined.

      Cut in Butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs with pea-sized butter pieces.

        Add Cheese: Gently fold in the shredded cheddar cheese and chopped chives if using. Be careful not to overmix.

          Combine Wet Ingredients: Pour the buttermilk into the mixture and stir until just combined. The dough should be slightly sticky, and it's okay if there are a few floury patches.

            Shape the Biscuit Bites: Lightly flour your hands and scoop small amounts of dough (about 1-2 tablespoons) to form bite-sized balls. Place them on a floured surface, and slightly flatten them for even cooking.

              Arrange in Air Fryer: Lightly spray the air fryer basket with cooking spray. Arrange the biscuit bites in a single layer in the basket, making sure not to overcrowd them (you may need to do this in batches).

                Air Fry: Cook the biscuit bites at 350°F (175°C) for 8-10 minutes, or until they are golden brown on top and cooked through. Shake the basket halfway through cooking for even browning.
