1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

1 bell pepper, chopped (any color)

2 carrots, diced

1 zucchini, diced

2 cups corn kernels (fresh, frozen, or canned)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

4 cups vegetable broth

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper to taste

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for about 3-4 minutes until the onion is translucent.

    Add Veggies: Stir in the chopped bell pepper, diced carrots, and zucchini. Cook for another 5-7 minutes until the veggies soften.

      Mix it Up: Add the corn, black beans, kidney beans, and diced tomatoes with their juices to the pot. Stir well to combine.

        Spice it Up: Pour in the vegetable broth, then add the chili powder, cumin, smoked paprika, onion powder, salt, and pepper. Stir thoroughly and bring the mixture to a boil.

          Simmer: Lower the heat and let your soup simmer for about 20-25 minutes, allowing all flavors to meld together. Adjust seasoning with more salt, pepper, or spices if desired.

            Serve: Ladle the soup into bowls and top with diced avocado and fresh cilantro. Serve with lime wedges on the side for an added zing.
