1 block (8 oz) tempeh, crumbled

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup canned tomato sauce

2 tablespoons tomato paste

2 tablespoons maple syrup

2 tablespoons apple cider vinegar

2 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon black pepper

¼ teaspoon salt (adjust to taste)

4 whole grain hamburger buns

Fresh parsley or cilantro, for garnish (optional)

Pickles, for serving (optional)

Instructions
 

Prepare the Tempeh: Start by crumbling the tempeh into small pieces using your hands or a fork. This will give it a texture similar to ground meat.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes. Then, stir in the minced garlic and diced bell pepper, cooking for another 3-4 minutes until softened.

      Cook the Tempeh: Add the crumbled tempeh to the skillet and cook for about 5-7 minutes, stirring occasionally until slightly browned.

        Make the Sauce: In a mixing bowl, combine the tomato sauce, tomato paste, maple syrup, apple cider vinegar, soy sauce, smoked paprika, cumin, chili powder, black pepper, and salt. Mix well until smooth.

          Combine: Pour the sauce over the tempeh mixture in the skillet. Stir everything together and let it simmer on low for about 10-15 minutes, stirring occasionally to allow the flavors to meld together.

            Toast the Buns (optional): While the mixture is simmering, you can toast the whole grain hamburger buns on a skillet or in the oven until golden brown.

              Serve: Once the sloppy joe mixture is ready, spoon a generous amount onto the bottom half of each bun. Add fresh parsley or cilantro for garnish, if desired, and top with pickles for an extra crunch. Place the top half of the bun on and serve immediately.
