Ingredients

1 cup rolled oats

1 cup milk (dairy or non-dairy)

1 large egg

1 tablespoon vanilla extract

1 tablespoon maple syrup (or honey)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon ground cinnamon (optional)

1 cup whole wheat flour (or all-purpose flour)

Butter or oil for cooking

Fresh fruit and maple syrup for serving

Instructions

Prepare Oats: In a medium bowl, combine the rolled oats and milk. Let the mixture sit for about 10-15 minutes to allow the oats to soften and absorb the liquid.

Mix Wet Ingredients: In another bowl, whisk together the egg, vanilla extract, and maple syrup.

Combine Mixtures: After the oats have soaked, pour the wet ingredients into the bowl with the oats. Stir until well combined.

Add Dry Ingredients: In a separate bowl, mix the flour, baking powder, baking soda, salt, and ground cinnamon. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to over-mix; a few lumps are okay.

Preheat Pan: Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.

Cook Pancakes: Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for about 2-3 minutes, until bubbles start to form on the surface and the edges look set. Flip and cook for an additional 2-3 minutes, until golden brown.

Serve: Transfer the pancakes to a plate and keep warm. Repeat with the remaining batter. Serve warm topped with fresh fruit, additional maple syrup or honey, and a sprinkle of cinnamon if desired.
