4 large whole wheat tortillas

8 ounces sliced turkey breast

4 ounces sharp cheddar cheese, sliced

2 medium apples (such as Honeycrisp or Gala), cored and thinly sliced

2 tablespoons Dijon mustard

1 tablespoon honey (optional)

1 teaspoon cinnamon

Fresh spinach or mixed greens (optional)

Salt and pepper to taste

Olive oil spray or non-stick cooking spray

Prepare the Tortillas: Lightly spray both sides of each tortilla with olive oil spray. This will help them crisp up nicely when baked.
