1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon ground ginger

1 teaspoon garlic powder

1 tablespoon maple syrup

1 tablespoon sesame oil

For the Tropical Salsa:

1 cup pineapple, diced

1 red bell pepper, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced (optional, for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Taco Assemblage:

8 small corn or flour tortillas

1 avocado, sliced

Fresh lime wedges (for serving)

Optional toppings: radish slices, microgreens, or crunchy cabbage

Marinate the Tofu: In a large mixing bowl, whisk together soy sauce, lime juice, ground ginger, garlic powder, maple syrup, and sesame oil. Add the cubed tofu, gently tossing to coat. Let it marinate for at least 30 minutes (or longer if time allows) in the fridge.

    Prepare the Tropical Salsa: In a separate bowl, combine diced pineapple, red bell pepper, red onion, jalapeño (if using), cilantro, and lime juice. Season with salt and pepper to taste. Mix well and set aside to let the flavors meld.

      Cook the Tofu: Preheat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu (reserve the marinade) and sauté for about 8-10 minutes, turning occasionally, until the tofu is golden brown and slightly crispy. Add the reserved marinade to the skillet and continue to cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

        Warm the Tortillas: While the tofu is cooking, warm the tortillas in a separate skillet over medium heat for about 30 seconds on each side, or until pliable.
