12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup black olives, sliced

1/2 cup bell peppers (red and yellow), diced

1/4 cup red onion, finely chopped

1/2 cup mozzarella balls (bocconcini)

1/4 cup freshly grated Parmesan cheese

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 garlic clove, minced

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the tortellini cooks, prep the vegetables. Halve the cherry tomatoes, chop the spinach, slice the olives, and dice the bell peppers and red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper until well combined.

        Combine the Ingredients: In a large mixing bowl, combine the cooled tortellini, cherry tomatoes, spinach, olives, bell peppers, red onion, and mozzarella balls.
