Ingredients

14 oz firm tofu, drained and pressed

1 tablespoon soy sauce

1 tablespoon olive oil

1 tablespoon maple syrup

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup strawberries, hulled and diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely diced (optional for heat)

Juice of 1 lime

1 tablespoon fresh cilantro, chopped

Instructions

Prepare the Tofu:

    - Cut the pressed tofu into 1-inch cubes.

      - In a mixing bowl, whisk together the soy sauce, olive oil, maple syrup, garlic powder, smoked paprika, salt, and pepper.

        - Add the tofu cubes to the marinade and toss gently to coat evenly. Allow it to marinate for at least 30 minutes, preferably in the refrigerator for more flavor.

          Make the Strawberry Salsa:

            - In a bowl, combine the diced strawberries, red onion, jalapeño (if using), lime juice, and chopped cilantro.

              - Mix gently and season with a pinch of salt. Let the salsa sit for 15-20 minutes to allow the flavors to meld.

                Skewer the Tofu:

                  - Preheat your grill or grill pan over medium-high heat.

                    - Thread the marinated tofu cubes onto skewers, leaving a little space between each piece for even cooking.

                      Grill the Skewers:

                        - Place the skewers on the hot grill and cook for about 8-10 minutes, turning occasionally, until all sides are golden brown and slightly crispy.

                          Serve:

                            - Remove the skewers from the grill and serve warm topped with the fresh strawberry salsa. Enjoy your tofu skewers with a side of rice or salad for a complete meal!
