For the Coffee Syrup:

1 cup strong brewed coffee, cooled

2 tablespoons coffee liqueur (e.g., Kahlua)

2 tablespoons granulated sugar

For the Cake:

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

3 large eggs, room temperature

1 1/4 cups granulated sugar

1/2 cup unsalted butter, melted

1 cup whole milk, room temperature

1 teaspoon vanilla extract

For the Mascarpone Filling:

2 cups mascarpone cheese, room temperature

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

For the Topping:

Unsweetened cocoa powder, for dusting

Dark chocolate shavings, for garnish (optional)

Instructions
 

Prepare the Coffee Syrup:

    In a small bowl, combine the brewed coffee, coffee liqueur, and sugar. Stir until the sugar has dissolved. Set aside to cool completely.

      Make the Cake:

        Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

          In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, beat the eggs and sugar until light and fluffy. Mix in the melted butter, milk, and vanilla extract until well combined.

            Gradually fold the dry ingredients into the wet ingredients until just combined. Divide the batter evenly between the prepared cake pans.

              Bake the Cakes:

                Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                  Prepare the Mascarpone Filling:

                    In a mixing bowl, beat the heavy cream until soft peaks form. In another bowl, gently whisk together the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.

                      Fold the whipped cream into the mascarpone mixture until fully combined and fluffy.

                        Assemble the Cake:

                          Once the cakes are completely cooled, level the tops if necessary. Place one cake layer on a serving plate. Generously brush the top with the coffee syrup, allowing it to soak in.

                            Spread half of the mascarpone filling over the first layer. Place the second cake layer on top and repeat by brushing with the coffee syrup and spreading the remaining mascarpone filling on top.

                              Chill and Serve:

                                Refrigerate the assembled cake for at least 4 hours, preferably overnight, to allow the flavors to meld and the cake to set. Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings if desired.
