Tini’s “Surprise-Ingredient” Mac & Cheese

8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

2 cups milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp mustard powder

1/4 tsp cayenne pepper

Salt and black pepper to taste

1/2 cup roasted butternut squash, mashed (this is the surprise ingredient!)

1/2 cup panko breadcrumbs

2 tbsp olive oil

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a separate saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until slightly golden, making a roux.

      Add Milk: Gradually pour in the milk while continuously whisking to avoid lumps. Cook the mixture for about 5-7 minutes until it thickens slightly.

        Add Cheese: Lower the heat and stir in the shredded cheddar and Gruyère cheese until fully melted and combined. Season with garlic powder, onion powder, mustard powder, cayenne pepper, salt, and black pepper to taste.

          Incorporate Surprise Ingredient: Stir in the mashed roasted butternut squash until evenly mixed into the cheese sauce. This adds great flavor and creaminess!

            Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce and mix thoroughly until the pasta is fully coated.
