1 tablespoon olive oil

1/2 pound ground turkey (lean)

1 small onion, diced

2 cloves garlic, minced

2 cups fresh spinach, chopped

6 large eggs

1/4 cup milk (or milk alternative)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika

1/2 cup feta cheese, crumbled (optional)

Fresh herbs for garnish (e.g., parsley or chives)

Instructions
 

Prepare the Skillet: In a large non-stick skillet, heat the olive oil over medium heat.

    Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5 minutes until browned and fully cooked.

      Add Aromatics: Stir in the diced onion and minced garlic. Sauté for an additional 2-3 minutes until the onion is translucent and fragrant.

        Incorporate Spinach: Add the chopped spinach to the skillet, cooking for about 2 minutes until wilted. Remove the skillet from heat.

          Mix Eggs: In a large bowl, whisk together the eggs, milk, salt, black pepper, and paprika until well combined.

            Combine: Pour the egg mixture over the turkey and spinach in the skillet, gently stirring to evenly distribute the mixture. If using, sprinkle the crumbled feta cheese on top.

              Cook the Frittata: Return the skillet to low heat. Cover with a lid and cook for 8-10 minutes, or until the frittata is set and the edges are slightly puffed. Alternatively, for a perfectly cooked top, you can place the skillet under a broiler for 1-2 minutes, keeping a close eye on it to prevent burning.
