1/4 cup unsalted roasted peanuts, chopped (optional)

1/2 cup Thai dressing (see instructions for recipe)

For Thai Dressing:

1/4 cup peanut butter (or almond butter)

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon lime juice

1 teaspoon sesame oil

1 clove garlic, minced

1 teaspoon fresh grated ginger

1/4 teaspoon red pepper flakes (optional)

Instructions
 

Make the Thai Dressing:

    - In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, lime juice, sesame oil, minced garlic, grated ginger, and red pepper flakes until smooth. Adjust the flavor to your liking by adding more honey for sweetness or lime juice for tang.
