1 lb ground turkey

1 cup brown rice (uncooked)

1 cup low-sodium chicken broth

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 1/2 cups diced tomatoes (fresh or canned)

1/2 cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Rice: In a medium saucepan, combine brown rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes or until rice is tender and liquid is absorbed. Set aside when done.

    Cook the Turkey: In a large skillet over medium heat, add olive oil. Once hot, add diced onion and bell pepper. Sauté for 3-4 minutes until they begin to soften.

      Add Garlic and Spices: Stir in minced garlic, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Cook for an additional minute until fragrant.

        Brown the Turkey: Add the ground turkey to the skillet. Use a spatula to break it up into small pieces. Cook until browned and fully cooked through, about 5-7 minutes.

          Mix in Veggies: Stir in the black beans, corn, and diced tomatoes. Cook for another 5-10 minutes until heated through, stirring occasionally. Adjust seasonings as needed.
