2 cloves garlic, minced

1 tablespoon grated fresh ginger

1 large egg

1 tablespoon soy sauce

1 tablespoon sesame oil

Salt and pepper, to taste

For the Teriyaki Glaze:

1/4 cup brown sugar

1/4 cup mirin (or rice vinegar)

2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

1 tablespoon sesame seeds (for garnish)

1 tablespoon chopped green onions (for garnish)

For Assembling:

Skewers (wooden or metal)

Fresh vegetables for skewering (like bell peppers, zucchini, or cherry tomatoes)

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground meat, breadcrumbs, chopped green onions, minced garlic, grated ginger, egg, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

      - Roll the mixture into 1-inch meatballs and set them aside on a baking sheet.

        Preheat the Grill:

          - Preheat your grill or grill pan over medium heat.

            Make the Teriyaki Glaze:

              - In a small saucepan over medium heat, combine the soy sauce, brown sugar, and mirin. Stir until the sugar is dissolved.

                - Bring the mixture to a gentle boil, then add the cornstarch mixture. Stir continuously until the glaze thickens (about 2-3 minutes). Remove from heat and set aside.

                  Skewer the Meatballs:

                    - Thread the meatballs onto the skewers, alternating with your choice of vegetables for added color and flavor. Make sure not to overcrowd the skewers.

                      Grill the Skewers:

                        - Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the meatballs are cooked through and have nice grill marks.

                          Glaze the Meatballs:

                            - During the last few minutes of cooking, brush the teriyaki glaze over the meatballs, allowing it to caramelize and add extra flavor.

                              Serve:

                                - Once cooked, remove the skewers from the grill. Garnish with sesame seeds and chopped green onions. Serve with additional teriyaki glaze on the side for dipping.
