4 medium sweet potatoes

1 pound ground turkey (or beef)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning (or homemade blend of chili powder, cumin, garlic powder, and oregano)

1 cup diced tomatoes (fresh or canned)

1/2 cup red onion, diced

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

Olive oil

Salt and pepper to taste

Sour cream or Greek yogurt for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce several times with a fork. Rub lightly with olive oil, and sprinkle with salt and pepper. Place them on the prepared baking sheet.

      Roasting: Roast the sweet potatoes in the preheated oven for 45-50 minutes, or until tender when pierced with a fork.

        Cook the Filling: In a large skillet over medium heat, add a drizzle of olive oil and sauté the red onions until translucent, about 3-4 minutes. Add the ground turkey, breaking it up with a spatula, and cook until browned and cooked through.

          Season: Stir in the taco seasoning, diced tomatoes, black beans, and corn. Cook for an additional 5-7 minutes, or until everything is heated through. Adjust seasoning with salt and pepper to taste.

            Prepare Toppings: While the filling is cooking, prepare the avocado and cilantro. In a small bowl, toss the diced avocado with lime juice to prevent browning.
