Taco Stuffed Bell Peppers with Cheesy Toppings

4 large bell peppers (any color)

1 pound ground beef (or turkey for a healthier option)

1 cup black beans, drained and rinsed

1 cup corn, frozen or fresh

1 cup salsa (your preferred level of spice)

1 teaspoon taco seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese (or Mexican blend)

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. If they don’t stand upright, trim a small bit off the bottom so they are stable.

      Cook the Meat: In a large skillet, brown the ground beef over medium heat. Drain any excess fat.

        Mix in Ingredients: Add the black beans, corn, salsa, taco seasoning, garlic powder, onion powder, salt, and pepper to the skillet with the cooked meat. Stir and cook for about 5 minutes until everything is heated through and well combined.

          Stuff the Peppers: Spoon the taco filling into each prepared bell pepper, packing it tightly.

            Top with Cheese: Place the stuffed bell peppers in a baking dish. Sprinkle the shredded cheese evenly over the tops of each pepper.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.

                Serve: Remove from the oven and let them sit for a few minutes. Plate the stuffed peppers and serve with a dollop of sour cream and sprinkle with fresh cilantro for garnish.
