Taco Chicken Zoodle Bowls

Ingredients
  

2 medium zucchinis (spiralized into zoodles)

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon taco seasoning

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 bell pepper (red or green), diced

1/2 cup red onion, diced

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, jalapeños, tortilla strips

Instructions
 

Prepare the Chicken: Season the chicken breasts with taco seasoning, salt, and pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the skillet and allow to rest for a few minutes before slicing it into bite-sized pieces.

    Sauté the Veggies: In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced red onion and bell pepper for about 3-4 minutes until soft. Add the black beans, corn, and cherry tomatoes, cooking for an additional 2-3 minutes until warmed. Season with a pinch of salt and pepper.

      Prepare the Zoodles: Using a spiralizer or mandolin, spiralize the zucchinis into noodles. You can lightly sauté the zoodles in the same skillet for 2-3 minutes to soften them slightly, or leave them raw for a fresher crunch.

        Assemble the Bowls: Start with a base of zoodles in each bowl, top with the sautéed veggie mix, and then add sliced taco chicken.

          Add Avocado and Cilantro: Sprinkle diced avocado and chopped cilantro over each bowl. Drizzle with fresh lime juice for an extra burst of flavor.
