2 cups rolled oats

2 cups almond milk (or milk of choice)

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh strawberries, hulled and sliced

1/4 cup chopped nuts (e.g., almonds, walnuts) - optional

1/4 cup Greek yogurt (for serving, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin or line it with parchment paper liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond milk, honey (or maple syrup), and vanilla extract until fully combined.

        Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until everything is well mixed. Gently fold in the sliced strawberries and nuts (if using).

          Fill Muffin Tin: Evenly distribute the mixture into the prepared muffin tin, filling each cup about 3/4 of the way full to allow for rising.
