2 cups cooked chicken, shredded or diced

1 cup fresh pineapple, diced

1 red bell pepper, thinly sliced

1/2 cup red onion, thinly sliced

2 tablespoons olive oil

3 tablespoons sweet chili sauce

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon ground ginger

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

1 cup mixed greens (e.g., arugula, spinach, or lettuce)

1 avocado, sliced

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Chicken Mixture: In a medium bowl, combine the cooked chicken, diced pineapple, sliced bell pepper, and red onion.

    Make the Sauce: In a small bowl, whisk together the olive oil, sweet chili sauce, soy sauce, garlic powder, ground ginger, salt, and pepper until well combined.

      Combine: Pour the sauce over the chicken and vegetable mixture, tossing gently to coat everything evenly. Adjust seasoning to taste if needed.

        Warm the Tortillas: Heat the whole wheat or spinach tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until warm and pliable.
