2 cups fresh or frozen raspberries

1/4 cup honey or maple syrup (for a vegan option)

1 tablespoon lemon juice

1/4 cup chia seeds

1 cup rolled oats

1/2 cup almond flour or whole wheat flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

Instructions
 

Prepare the Raspberry Filling: In a medium saucepan, combine the raspberries, honey or maple syrup, and lemon juice. Heat over medium heat, stirring occasionally until the raspberries break down and the mixture starts to bubble (about 5-7 minutes). Remove from heat and stir in chia seeds. Let cool for about 10-15 minutes until it thickens.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

      Make the Crust: In a large bowl, mix the rolled oats, almond flour, baking powder, and salt. In a separate bowl, whisk together the melted coconut oil, vanilla extract, and 2 tablespoons of honey or maple syrup. Combine the wet and dry ingredients, mixing until just combined.

        Assemble the Bars: Press about two-thirds of the oat mixture into the bottom of the prepared baking pan to form the crust. Spread the raspberry filling evenly over the crust, and then crumble the remaining oat mixture on top, ensuring it’s evenly distributed.

          Bake: Place in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and firm.

            Cool and Cut: Allow the bars to cool in the pan for at least 30 minutes, then lift them out using the parchment paper overhang. Cut into squares or rectangles, and serve. These bars can be stored in an airtight container in the refrigerator for up to a week.
