Sweet Potato Wedges with Ranch Dip

For the Sweet Potato Wedges:

2 large sweet potatoes

3 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon cayenne pepper (optional, for a kick)

For the Ranch Dip:

½ cup Greek yogurt

½ cup mayonnaise

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh chives, chopped (or 1 teaspoon dried chives)

1 tablespoon lemon juice

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

Prep the Sweet Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the sweet potatoes. Cut them into wedges, approximately 1 inch wide and 3-4 inches long for even cooking.

    Season the Wedges: In a large bowl, toss the sweet potato wedges with olive oil, paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper (if using). Make sure each wedge is well coated.

      Arrange on Baking Sheet: Spread the seasoned wedges in a single layer on a baking sheet lined with parchment paper. Ensure they are not overcrowded to allow for crispiness.

        Bake the Wedges: Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the wedges halfway through the cooking time, until they are golden brown and crispy on the outside.

          Prepare the Ranch Dip: While the wedges are baking, combine Greek yogurt, mayonnaise, dill, chives, lemon juice, garlic powder, onion powder, salt, and pepper in a small bowl. Whisk until smooth and well mixed. Taste and adjust seasonings as desired.
