2 medium sweet potatoes

4 large eggs

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 ripe avocado, sliced

Fresh chives or parsley, chopped (for garnish)

Optional toppings: feta cheese, chili flakes, or hot sauce

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash and peel the sweet potatoes. Cut them lengthwise into slices about 1/2 inch thick.

      Season the Slices: In a large bowl, toss the sweet potato slices with olive oil, garlic powder, smoked paprika, salt, and pepper until well coated.

        Bake the Sweet Potatoes: Arrange the seasoned sweet potato slices on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through, until they are tender and slightly golden.

          Cook the Eggs: While the sweet potatoes are baking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet, one at a time. Cook them sunny-side up or to your desired doneness. Season with a pinch of salt and pepper.
