1 large sweet potato, peeled and diced

1 lb ground turkey

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 cups spinach, roughly chopped

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

1/4 cup chicken broth (optional for added moisture)

Fresh parsley for garnish

Prepare the Sweet Potatoes: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once heated, add the diced sweet potato. Sauté for about 8-10 minutes, stirring occasionally, until they start to brown and soften. If they begin to stick, you can add a splash of chicken broth to keep them from burning.

    Cook the Turkey: Push the sweet potatoes to one side of the skillet. Add the remaining tablespoon of olive oil to the other side, then add the ground turkey, breaking it apart with a spatula. Sprinkle on the smoked paprika, cumin, salt, and black pepper. Cook for about 5-7 minutes until the turkey is browned and cooked through, stirring to mix with the sweet potatoes.

      Add Vegetables: Once the turkey is cooked, add the chopped onion and minced garlic to the skillet. Stir everything together and cook for an additional 3-4 minutes until the onion becomes translucent. Then add the diced red bell pepper, continuing to cook for another 3 minutes until tender.
