1/2 cup pitted Medjool dates

1/4 cup unsweetened shredded coconut

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon chia seeds

1/2 teaspoon vanilla extract

Pinch of salt

Extra shredded coconut and crushed pistachios for rolling

Prepare the Food Processor: In a food processor, combine the shelled pistachios and shredded coconut. Pulse until finely chopped and mixed, resembling a coarse flour texture.

    Add Sticky Ingredients: Add the pitted dates, honey (or maple syrup), rosewater, chia seeds, vanilla extract, and a pinch of salt into the processor. Blend everything together until the mixture is sticky and holds together. You may need to scrape down the sides a few times.
