1 cup raw pistachios, shelled and unsalted

1/4 cup shredded unsweetened coconut

2 tablespoons rose water

1 tablespoon almond butter (or any nut butter of choice)

1/4 teaspoon sea salt

2 tablespoons chia seeds (optional for added texture)

1/3 cup additional chopped pistachios for rolling

Edible rose petals for garnish (optional)

Prepare the Dates: In a food processor, add the pitted Medjool dates and pulse until they form a sticky, cohesive mass. If your dates are too firm, soak them in hot water for about 10 minutes to soften, then drain and proceed.

    Combine Ingredients: Add the raw pistachios, shredded coconut, rose water, almond butter, sea salt, and chia seeds to the food processor with the blended dates. Pulse everything together until the mixture is well combined and a bit crumbly, but still holds together when pressed.

      Form the Bites: Use your hands to scoop out about 1 tablespoon of the mixture. Roll it into a small ball, and then roll it in the chopped pistachios until well coated. Repeat this process until all the mixture is shaped into bites.
